Mrs. Parker's summer recipes: Barbecue ribs and spicy black-eyed peas

Spicy Rubbed Ribs           
Beef or Pork Ribs (your choice)
Salt & Pepper            
Red pepper/cayenne
Ground cumin
Chili powder
Garlic
Paprika
Allspice

Preheat oven to 350 degrees. Place rack in a shallow roasting pan and add ½ cup water.  Score the back of the ribs. Place on the rack, meat side up, rub dry spices into ribs and cover with foil. Bake covered for 1 hour. Uncover, top with your favorite BBQ Sauce* and bake an additional 45 minute to 1 hour uncovered. Ribs are done when the meat begins to pull away from the bones. 

*An alternative sauce to flavor ribs is the chipotle sauces. They are available in your local grocery or make it yourself.  Recipes are provided on several internet food sites. 

Spicy Black Eyed Peas
Serves 6-8
4 c (packages) fresh black-eyed peas)
6 c chicken stock or broth
¼ lb smoked bacon, chopped
1 yellow onion, chopped
2 jalapenos, seeded and chopped (1 pepper yield mildness)
4-5 garlic cloves, minced
1 tbsp ground cumin
Salt and pepper to taste

In large pot, sauté the bacon until just done. Add the onions and sauté for 3 to 4 minutes.  Add the garlic and sauté for another minute.  Add the jalapeno, stock, black-eyed peas and cumin.  Simmer for 30 to 35 minutes. Season to taste and serve.
